I recently tired a new android build for Beelink MX3 II and it appears to work on Le Potato board as well!
It has a regular "tablet" UI, status and navigation bars, Gapps!
Moreover I was able to connect my 10 inch HDMI display with USB capacitive touchscreen and it worked out of the box! I connected a TPlink wifi dongle and it worked as well (if it doesn't try rebooting the device)
I did burn the image to EMMC using USB burning tools.

P.S. First boot may take up to 15 minutes. It will seem that the board is stuck on boot animation but be patient- it should boot.
